Baked Tomatoes with Green Breadcrumbs

If you’re looking for a healthy, light meal, you’ve just found one! These baked tomatoes will become your new favourite snack.  
  • 10 tomatoes
  • 1.7 oz. / 50 g. parmesan cheese
  • 2 handfuls of breadcrumbs
  • A large handful of basil
  • Salt
  • Freshly ground pepper
  • Olive oil
Remove the tomatoes’ green parts with a sharp knife and halve them sideways. If they are very round, cut off a bit of the base so that even the upper half stands upright. Spread the halves into a baking tin with the cut part upwards. Mix the breadcrumbs with grated cheese and basil and blend them. Add salt, pepper and mix it all thoroughly. Generously cover the tomatoes with the mix and drizzle a bit of olive oil over the top. Bake in an oven preheated to 374°F / 190°C for about 15 minutes.
