Horseradish Boosts Immunity

The most aromatic and health-benefiting herb is horseradish (Armoracia rusticana). This herb originated in Asia and contains a high amount of vitamin C and provitamin A, as well as numerous minerals. Even in small amounts, horseradish stimulates the appetite, improves the functioning of the digestive system, alleviates coughs and airway infections, and even has a mild diuretic function. It also prevents diseases caused by bacteria, viruses, fungi, and protozoa. It boosts the immune system and can even protect the body from cold-induced diseases.

Try out this horseradish chutney!

INGREDIENTS:
• 7 oz. / 200 g tomatoes
• 14 oz. / 400 g horseradish
• 4 onions
• 2 spoonfuls of clove
• 2 spoonfuls of ground cinnamon
• 1.7 fl oz. / ½ dcl vinegar
• 4 chili peppers
• 14 oz. / 400 g sugar

PREPARATION:
Wash the vegetables, grate the horseradish, and crush the cloves. Chop up the unripe tomatoes, onion, and chili peppers, then add salt. Leave the mixture in a bowl overnight. In the morning, add the rest of the ingredients. Stew the chutney base over a mild heat in a lidded pot until all excess water has boiled away, then let the horseradish chutney cool down. Seal in jars and store. The chutney tastes best after two to three months.
