Honey Ice Cream Bars with Walnuts

Ingredients for six 1.5 fl oz./50ml. ice cream bars:
• 6.5 fl oz. / 200 ml. whipping cream
• 5 fl oz. / 150 ml. full-cream milk
• a small pinch of salt to enhance the flavor
• 5-6 spoonfuls of honey
• 1 oz. / 30 g. chopped nuts

Preparation:
Pour the cream and milk into a higher bowl. Add the salt and four spoonfuls of honey. Whisk it until the honey completely assimilates into the liquid. Give it a taste and add another spoonful of honey according to preference. Every honey has a different intensity of flavor, making it a good idea to add it progressively.

The target flavor is a bit sweeter than what we would like in yoghurt – through the freezing process the sweetness is diminished. Add the round nuts into the mixture or sprinkle them on top of the finished ice cream bars. Fill the forms with a tiny amount of space from the edge and freeze it for at least four hours, though more ideally overnight.
