THE HEALING EFFECTS OF LOCUST
Honey locust (Gleditsia triacanthos) is a thorny tree with pods of up to 20 centimeters / 8 inches in length. The flesh of a ripe pod has a surprisingly sweet taste.

The crude seeds are also edible, and, when raw, taste like peas. When cooked, the pods taste like beans. When the seeds are baked, they can be used to prepare a pleasant-smelling coffee. The seeds should be  cooked until soft to be then added to vegetables or soups.
