SALAD WITH BLOOMS

Blooms in general contain a lot of goodness, including vitamins, minerals and enzymes, and it is thanks to this that they were used in many of our predecessors’ diets.

Cercis blooms can be used to add variety to a range of salads, helping us create a tasty and healthy meal. If you are looking to try something unconventional, you can try the following salad recipe.

Its advantage is that you can at least partially use your own harvest in it, as at the time when the cercis blooms, other stored root or sterile vegetables can still be used.

We will need 200 grams / 7 ounces of washed peas, which are to be added to a small amount of boiling salted water; stew them until soft and then decant. In the meantime, gently grind up 100 grams / 3.5 ounces of carrots and 100 grams / 3.5 ounces celery and mix them with a handful of cercis blooms.
Carrots are very healthy, and in spring it is advisable to consume at least 50 grams / 1.7 ounces of raw carrots in order to replenish vitamin A levels. Furthermore, we will need 100 grams / 3.5 ounces of sterilized cucumbers, an onion cut into cubes and a cup of white yogurt. Mix everything together and serve the salad with several cercis blooms on top as a garnish.
