Zucchini-Pea Vegetable Sundae

Ingredients:

  • 1 zucchini
  • 2 handfuls of fresh peas
  • 1 carrot
  • ½ tsp lemon juice
  • 1 clove of garlic
  • A few coriander leaves
  • A few basil leaves
  • A pinch of Himalayan salt
  • ½ salad cucumber
  • A handful of radishes
  • A selection of herbs according to your taste (parsley, coriander, lemon balm…)
  • A sprig of mint for garnishing
  • Several balls of fresh peas for garnishing

Directions:

Peel the zucchini, slice it, salt it lightly and let it “sweat” for five minutes (let the salt draw out the moisture and then blot up the liquid with a paper towel). Rinse the peas. Put both the zucchinis and the peas into a blender, add lemon juice, garlic, coriander, basil and blend thoroughly.

Peel the carrot and grate it. Chop the radishes. Cut the salad cucumber lengthwise in half and then the halves into quarters. Take a small bowl or a glass and pour the blended zucchini-pea mixture in it. Garnit with the cucumbers and carrots and sprinkle with chopped herbs, carrots and a sprig of mint. Serve with raw pancakes (optional).
