Ingredients for four 1.5 fl oz. /50 ml. ice creams:
• 6.5 fl oz. / 200 ml. grapefruit juice from a freshly pressed pink grapefruit
• a bit of lemon juice
• 1 spoonful of honey or agave syrup (and 1-2 spoonfuls according to taste)

Preparation:
Thoroughly dissolve honey and lemon juice in grapefruit juice. Try the taste and increase sweetness if necessary. Fill the ice cream forms but leave about 0.15 inch / 4 mm. space by the edge and freeze for at least 4-6 hours.

If we don’t have the forms, a small yoghurt cup can help. Pour the mixture into the cup and freeze it for 30 minutes. After that, push a stick or handle into the half-solid mixture and place it back into the freezer.
